Excellent Basque restaurant near Argüelles, Corte Inglés, etc. Try the artichokes, they're a house specialty. Probably the best I've ever had. Even people who don't like artichokes like them. Other vegetarian friendly foods.... erm, wild mushrooms, asparagus, and the deserts!
For meat eaters (like my parents) this is a fine place, since most other specialties include meat and fish. I also think it's a good place for people who are new to this type of cuisine, because the quality of the ingredients (good olive oil, for example) is crucial when approaching new foods.
It isn't particularly cheap or expensive (think 25-30 euro/person), the service is very good, and the atmosphere is friendly.

Tortas, hot sandwiches
Tortas, if you're Mexican (or molletes if you're from Southern Spain). The difference is clearly in the fillings: avocado, cheese, egg, chile, nopales... with meat if that's your choice. They cost from 4-6 euro. and are deliciously worth every cent.
Get one to go or sit in the low, uncomfortable tables surrounding the bar and eat as you feel your arteries clog. They have other Mexican snacks and beers to accompany. But the 'tortas' are what I'd go there for. If you want it spicy, be sure to tell the waiter/cook.

An instant favorite
Seoul is an 'asador' style place that was converted into a Korean restaurant, which benefits from the rustic feeling of the previous business. The place is magical, with great service and absolutely delicious food.
And prices were pretty decent as well: 20 euro per person, 2 dishes each with a side of kimchee to share + soft-drinks and 1 dessert, 1 tea.
I am now a big fan of Korean cuisine in general and of this restaurant in particular. I'll be back for sure!

argentinian pizza stop
I've been going to this Argentine pizzeria since I was a teenager and I still love it. They moved across the street a couple of years (?) ago, but the formula is still the same: you eat standing or at tall counter-like tables. So it's the perfect transition from pre-dinner drinks to post-dinner drinks... ;-)
My favorite dish here is the pascualina, a spinach pie with feta cheese and onions, seasoned with nutmeg... but the pizzas are great too.
You usually get a complimentary piece of their cake with dulce de leche over it... which I'm not super fond of, but I appreciate the gesture. And the owners are really funny characters.

One of my favorite places on calle Argumosa, in Lavapiés. A great place to take people for cañas and order a bite to eat, maybe even make a dinner out of it. Nice light. Hip, but unpretentious.
Vegetarian options are VERY limited, though.

This is a great store with an even greater selection. Manga, superheroes, Spanish artists and zine racks are upstairs. For comix and comic books in English, French... see the downstairs area. Be careful not to bump your head, even short people are in danger of cracking their skull on the way down.

My favorite vegetarian restaurant in Madrid. Very no frills, homemade cooking. And absolutely delicious!
The best option is to order from the fixed menu. I love "potaje del druida" and their banana dessert.
They usually only open for lunch, but you can have dinner on a Friday. It's usually quite busy in on weekends, but the trick is to sign up for a table and come back in a while.

Superb vegetarian take-out buffet & organic food shop. The only thing I dislike about it is the size: it's too small!
Pay by weight: 2,10€ for every 100 grams of food on your plate.
Try the Indian tortilla.
There's another one in La Latina now.

Some people believe green M&M's taste better than red ones, and I think Moharaj food is better than the other Indian restaurants in Lavapiés. I wouldn't be surprised if someone told me they share the kitchen with the place next door to it, which has a bit more flair than Moharaj, but basically the same menu.
Inside it can feel small and crowded, but this is a great place for dinner with a group when the good weather allows them to set up terraces outside. Like with Chinese restaurants, I think the best option is to order a variety of dishes to share, with sides of rice and nan.

Definitely a keeper
Since it was hidden behind large wooden shutter-doors and advertised as a 'Tienda de Vinos' (wine shop), I'd never thought to enter this enduring establishment. It seems to have survived the invasion of the chic & cheap eateries in the Chueca area. 'El Comunista' is cheap and old school, and the food is the real deal too: Spanish home-style cooking at it's best, in generous yet not overwhelming quantities.
