Superb vegetarian take-out buffet & organic food shop. The only thing I dislike about it is the size: it's too small!
Pay by weight: 2,10€ for every 100 grams of food on your plate.
Try the Indian tortilla.

This is a new Viva la Vida locale next to Plaza de la Paja. It's huge compared to the little shop in Huertas. The food is so good that the unpleasant woman at the register and awful music on the speakers couldn't ruin the experience for us.
I could go here every day for a week and not be tired of it... If I could only afford it.

Dutch style falafel
A Dutch franchise that is exclusively vegetarian and has a variety of fillings and sauces for the pita bread sandwiches they serve. Better, much better (fried in good oil? more veggies in the mix) than most falafel they serve at kebap places around town... and without the roasting meat in the background.

My favorite vegetarian restaurant in Madrid. Usually busy in on a weekend, but the trick is to sign up for a table and come back in a while.
I love "potaje del druida" and their banana dessert.
