Pizza!
This is a really great place to get good, cheap pizza in a fun neighborhood. They have a really wide variety and most of the pizzas cost around 7 euros (for a lot of food). And 1 euro copas (glasses of beer/wine)!!! The staff can seem a bit unfriendly, but they're not so bad once you get used to it, and they always fill the wine glasses up to the top. I recommend the spinach and goat cheese pizza and the three cheese.
Bottles of wine for 5 euros!

Highly recommendable
This is one of my favorite places to eat in Madrid. It's not super-cheap, but not outrageously expensive, and the food is fantastic, especially the cheese and honey dish. It's in the old neighborhood of Madrid with lots of character on a really small, quiet street. The atmosphere is really pleasant and the waiter is incredibly friendly*. I took my big American family there when they came to visit and we sat in the cozy back room and had a great meal. It might be a bit hard to find since it's on a twisty side street, but it's worth the quest for sure.
*My euphemism for very attractive, but he actually is quite friendly as well. Hopefully he still works there.

One of my favorite bars in La Latina. If you walk in on a Friday or Saturday night at around 12 you'll probably find people ranging in age from 20-50 drinking and singing along to old Spanish songs or Broadway musical soundtracks. The decor is confusing but delightful (Charlie Chaplin posters...musical instruments hung up on the wall...a Beethoven poster...), the crowd is varied and fun, and the music is always something you can either dance or sing to. The two owners bartend and they're really fun and hilarious. Also, there's a large back room with plenty of tables so it's a good spot to meet up with friends for an extended period of time.
Bonus: it's across the street from Casa Dani (11870.com/pro/taberna-casa-dani).

great tapas
This is a great place to get a few drinks and/or eat dinner/tapas. Their chorizo is excellent and the brie wrapped in bacon is delicious (how could it not be?). They also have 4.50 euro mojitos (by far the cheapest I've ever seen in Madrid). There's a bar, as well as a few tables, plus a small dining room in the back. There's a big selection of tapas and all of them that I saw looked amazing. Also it's got a nice ambiance with neat decorations. Definitely a great first stop for an evening out.

Great people, cheap wine
Some friends of mine lived on the same street as Casa Dani for a few months and we became regulars and eventually friends with Dani (and his mom too!). They're great people and they serve amazing cheese and very cheap (but not bad!) wine. A perfect place to start off an evening in La Latina.
Very good ensalada de bonito. Order it so that you can see Dani yell to his mom in the back room where she prepares it.

This is a convenient late-night spot if you're out around Malasaña/Chueca, but the cover is pretty annoying. Luckily if you email them earlier in the day and tell them your name and how many friends you'll have with you they let you in free! Of course you get on their mailing list, but it's a small price to pay.
That being said, the one time I actually made it here it was absolutely packed and nearly impossible to move. The music wasn't bad, but it was difficult to dance because it was so crowded. Also there were quite a lot of young banker types there, at least the night I showed up.
Worth it if you're already in the neighborhood and you've signed up for the free entry...

A small bookstore with an eclectic selection, mostly in Spanish. They have quite a few Cortázar books, lots of García Márquez, Borges, all the Boom dudes. Plus lots of interesting cultural theory books, stuff about feminism and globalization, etc., and some Spanish translations of offbeat English-language literature like The Heart is a Lonely Hunter by Carson McCullers (that one is hard to find in English at most stores!). Their English-language selection is extremely limited, but it's a great place to find interesting stuff in Spanish, and it's a pleasant store in general.

An excellent used book store. They lured me in with a box of 1 euro books sitting out front (including those awesome little pulp fiction paper books about violence in the Wild West) and I spent a good while looking around. They've got tons of poetry and a large selection of literary criticism. Lots of old and interesting editions. What surprised me most was that they had several issues of the Latin American literary magazine Nuevo Mundo from the 1960s.

A bit like Tupperware in Malasaña, but smaller, more laid back, and generally superior. The crowd is young and there to awkwardly dance. I was there on a Thursday night and they played almost exclusively American (and some British) rock from the '60s and '70s plus, curiously--and much to everyone's apparent delight-- "That Thing You Do" from the 1996 Tom Hanks movie of the same name.
Fun and cool.

A very cool cafe. I went there to read during the middle of the day usually, but it's also a great place to have a beer or coffee with friends. Local art on the walls, friendly staff, decent coffee. A generally pleasant place to be. I definitely recommend it if you're just looking to hang around at a cafe, though it can get kind of crowded in the evenings.
Above average tortilla.
